The kitchens downtown were not built for the ranges in them. A Thermador or Wolf gas range sits in a dependency kitchen behind an 1840s house South of Broad, vented through a brick chase that was once a chimney. A wall oven from a 1970s renovation is still in service in a Hampton Park bungalow because the cabinet opening fits nothing new. Slide-in electric ranges fill the rentals off King Street and the College of Charleston. We reach all of it in fifteen minutes from West Ashley, park where the city allows, and carry the tool bag through a piazza gate more often than through a garage. The work is the same; the access is what makes downtown different.

Salt air is the peninsula’s range problem. Harbor humidity corrodes the spark modules and igniter electrodes on gas cooktops, so a burner that lit fine in April clicks without catching by August. Oven igniters age the same way everywhere, but in a Harleston Village kitchen a weak igniter that still glows will open the gas valve late, and the owner smells gas for a moment before the bake starts. On electric units we see bake elements burned through and temperature sensors drifting, so the oven reads 350 and bakes at 310. A caterer working out of a Cannonborough-Elliotborough kitchen called about uneven cakes; the convection fan motor had seized and nothing else was wrong.
The spark module is firing but the electrode is corroded, wet or misaligned, or the burner cap is off center. We clean and reseat the burner, check the electrode gap and test the module output. If one burner lights and another does not on the same module, the electrode is the problem, not the module.
A weak igniter draws too little current to open the safety valve on time. We read the igniter amperage, which tells us exactly how tired it is, and replace it if it is out of range. The van carries igniters for most ranges and wall ovens; the fix is usually done in the same visit.
A bake or broil element burned through, a relay on the control board, or a temperature sensor reading wrong. We meter the element, check voltage at its terminals and read the sensor resistance at room temperature. On wall ovens in older Wagener Terrace kitchens we also check the wiring at the junction box behind the unit.
The sensor has drifted, the thermostat needs calibration or the convection fan has stopped. We put a calibrated probe in the oven and compare it to the display through a full cycle, then correct what the reading points to. Uneven browning with the right temperature is almost always the fan.
On gas, a blocked burner port or failed electrode. On electric coil and radiant cooktops, a failed element, a bad receptacle or a worn infinite switch. We swap elements to confirm before replacing anything, and meter the switch under load. Induction cooktops get their own board-level check.
A power surge from a hurricane-season outage, a failed board, or a door latch motor stuck after a self-clean cycle. We check incoming power at the outlet or junction box, read the code, meter the latch and the board outputs. Downtown outages take out more range boards than owners expect.
The oven diagnosis is a set of numbers. Igniter current tells us whether a gas oven will light reliably before it fails to. Element resistance and voltage at the terminals tell us whether an electric oven has a dead element or a dead relay feeding it. Sensor resistance against a thermometer tells us whether the oven is lying about its temperature. On gas cooktops we watch the spark, check the electrode gap and test the module. On pro-style ranges in South of Broad and Harleston Village kitchens, a Wolf, Viking or Thermador is built to be serviced from the top and the front, and we do not move a 400-pound range unless the repair demands it.
